Fusion Hot Sauce didn’t start with a name or a plan. For a long time, it was just something I made in the kitchen when the garden peppers were ready. Instead of just throwing in whatever was around, I'd pick out specific fruits that I thought would complement certain flavor profiles and balance out the heat. I’d dial in the recipe, bottle a few jars, and that was it. No big vision. I just genuinely enjoyed making it.
A friend of mine was into the same thing, so we’d spend time talking about the sauces we’d made and comparing notes. Eventually, we decided to settle the debate the simple way: we each brought a bottle to work and let people try them. We set up a basic tally system so our coworkers could taste both and vote for their favorite.
When we counted it up, my sauce won, 11 to 5.
Earning the bragging rights was great, but then something else happened. The people who voted for my sauce started asking if I had any extra bottles. Then their friends asked. Before long, people I barely knew were checking in to see when the next batch was coming.
That’s basically how this started. Not from a launch plan, just a hobby that kept growing simply because people kept emptying their bottles and wanting more.
I still make it the same way today: small batches, peppers from the garden when I can, and made from scratch. Due to the fact I’m working with real ingredients and focusing on those distinct flavor profiles, no two batches come out exactly the same. The heat or the exact color might shift just a bit from run to run. I like it that way. It proves it's real food, and it keeps the sauce honest.
